The Best Chocolate Chip Collagen Muffins (gluten free, keto, paleo)
In times of stress there is nothing better than baking. Baking with healthy ingredients, even better! Good quality chocolate and cacao is something I cannot live without. This superfood has more antioxidants than red wine and even green tea (but I still need my wine too). Cacao is high in magnesium, which can help to lower blood pressure and relax muscles. There’s a reason why we reach for this stuff during crisis. Adding in collagen helps to nourish the gut and pack a little protein. Bonus your skin might get a boost too. If you are going to indulge these are totally worth it and won’t compromise the gut. Here’s to a cleaner indulgence!
Chocolate Chip Collagen Muffins (gluten free, Keto, Paleo)

Ingredients
Dry
2 cups almond flour or oat flour
½ cup arrowroot
¾ cup unsweetened cocoa powder
4 scoop grass-fed collagen
1 tsp baking soda
¼ salt (I like Redmonds mineral salt)
Wet
¼ cup purified water
½ cup heavy coconut milk
3 Tbs melted coconut oil
½ cup coconut sugar
½ cup maple syrup
2 tsp vanilla
Add ins
¾-1 cup dark chocolate chips
*Organic cream cheese (if paleo leave out)

Instructions
1. Pre-heat oven to 350 degrees. In one medium size bowl sift flour, arrowroot, and cocoa powder. Add in baking soda and salt.
2. In a kitchen aid mixer add the water, milk, melted coconut oil, sugar, maple syrup, vanilla, and CBD. Mix on medium speed.
3. Slowly add the dry ingredients to the mixer. Once fully mixed add in the chocolate chips.
4. Pour batter into silicone muffin molds.
5. Add a dollop of cream cheese to the center of each muffin.
6. Bake for 23-25 minutes. Let fully cool. Top off with a raspberry on each muffin.
